Since discovering solar cooking, beets have become one of my favorite vegetables and this is one of my favorite ways to enjoy them.
Sun Oven Braised Beets with Horseradish Sauce
6 medium beets, peeled and quartered
2 tablespoons sugar
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 tablespoon red wine vinegar
2 tablespoons water
1/4 cup sour cream
1 tablespoon prepared horseradish
Set Sun Oven out to preheat.
In a large pot, stir together the beets, sugar, salt, pepper, vinegar, and water.
Cover and cook in the Sun Oven until the beets are tender, 2 to 3 hours. Remove the pot from the Sun Oven and let cool slightly.
In a small bowl, whisk together the sour cream and horseradish. Toss the sour cream mixture with the beets in the pot. Transfer to a serving dish.
Makes 6 to 8 servings.
