Here’s another lunchbox idea that I got from our local newspaper. The original used something called “mini-drumsticks” which I assumed meant the meatier part of the chicken wing. I’ll admit, the miniature version’s cuteness factor made them very tempting, but they were almost double the price per pound as the standard drumsticks I used. Putting the chicken pieces on a rack keeps them out of their own juices and makes them crispier and more portable.
Solar Lunchbox Drumsticks
1/2 cup brown sugar
1/2 soy sauce
1/4 teaspoon ground ginger
Put drumsticks in a plastic food storage bag. Mix sugar, soy sauce, and ginger in a bowl. Pour mixture into bag with the drumsticks. Place bag in a large bowl and let chicken marinate in the refrigerator for at least 30 minutes.
Set Global Sun Oven out to preheat.
Place a rack in a baking pan. Remove drumsticks from marinade and arrange them on the rack, discard marinade. Put baking pan in an oven bag or cover with aluminum foil and a tea towel. Bake in Sun Oven until meat is tender, about 4o minutes.
Makes 3 to 6 servings.
