This recipe comes from Weight Watchers so it’s a little lighter than your average crumble. It’s good on its own and divine with a scoop of vanilla ice cream or a dollop of whipped cream.
Skinny Sun Oven Peach Crumble
3 large peaches, sliced
3 tablespoons light brown sugar, packed
6 tablespoons whole wheat flour
6 tablespoons granulated sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 large egg white
4 tablespoons salted butter, melted
Set Sun Oven out to preheat. Spray an 8 x 10-inch baking dish with cooking spray.
Toss the peaches with the brown sugar in a small bowl until the sugar starts to dissolve. Spoon peaches into the prepared baking dish.
In another small bowl, whisk together the flour, sugar, cinnamon, and salt. Add the egg white and combine using your fingers until the mixture comes together and starts to crumble. Drop flour mixture on the fruit in clumps and drizzle with the butter.
Bake until the fruit starts to bubble, about 1 hour. Serve warm or at room temperature.
Makes 6 to 9 servings.
