Balsamic solar roasted onions can be used in salads and soups or as a topping for burgers and other grilled meats. They can easily be prepared along with whatever else you might have going in the Sun Oven. Use any shallow baking dish, pie pans work great too, and stack it on top.
Sun Oven Balsamic Roasted Onions
onions, sliced into rings
chopped flat-leaf parsley (optional)
Set Sun Oven out to preheat.
Toss the onions in the baking dish with equal amounts of oil and vinegar, 1 to 2 teaspoons of each per onion. Season with salt and pepper. Place the pan, uncovered, in the Sun Oven and cook until the onions are tender, 30 minutes to 1 hour. Let cool slightly and toss with parsley if using.
