This super simple recipe reminds me of something that would be on one of those cooking shows where the chef has to come up with something using only ingredients found in the refrigerator of a random family.
Sun Oven Sweet and Sour Chicken
2 tablespoons apricot jam
3 tablespoons reduced-sodium soy sauce
2 tablespoons water
1 tablespoon grated fresh ginger
1 to 1 1/2 pounds boneless, skinless chicken, breasts or thighs
Set Sun Oven out to preheat.
Combine the jam, soy sauce, water, and ginger in a pot. Add the chicken, turning to coat. Cover and cook in the Sun Oven until the meat is fully cooked, 1 to 1 1/2 hours. Cut chicken into pieces and serve with the cooking juices over rice.
Makes 4 to 6 servings.
