The maple syrup gives this creamy soup a subtle sweetness.
Sun Oven Sweet Potato Soup
2 1/2 pounds sweet potatoes, peeled and cut into 1-inch pieces
1 onion, finely chopped
1/4 cup maple syrup
1 clove garlic, minced
4 cups chicken or vegetable broth
1/2 cup warm milk
green onions, finely sliced (for garnish)
Set Sun Oven out to preheat.
In a large pot, combine the sweet potatoes, onion, maple syrup, garlic, and broth. Cover and cook in the Sun Oven until the sweet potatoes are very soft, 1 1/2 to 2 hours.
Using an immersion blender puree until smooth, or for a chunkier soup, use a potato masher and mash to desired consistency. Stir in milk.
Season to taste with salt and pepper.
Ladle into bowls and sprinkle green onion on each serving.
Makes 6 servings.
