Make sure to have plenty of rice or good crusty bread to soak up the delicious sauce.
Sun Oven Balsamic Chicken
1 tablespoon olive oil
1 onion, finely chopped
4 cloves garlic, minced
8 boneless, skinless chicken thighs, trimmed of excess fat
salt and pepper to taste
1/2 cup balsamic vinegar
2 tablespoons flat leaf parsley, chopped
Set Sun Oven out to preheat.
Combine the oil, onion, and garlic in a pot. Arrange the chicken on top in a single layer. Season with salt and pepper. Pour the balsamic vinegar over the chicken. Cover and transfer to the Sun Oven and cook until done, 1 1/2 to 2 hours. Sprinkle with parsley and serve.
Makes 4 to 6 servings.
