A sunny day, a carton of grape tomatoes close to their expiration date, some fresh basil, a few cloves of garlic, and a little olive oil came together in my Sun Oven today to make a delicious, easy to prepare pasta sauce.
Sun Oven Roasted Tomato Sauce
1 tablespoon olive oil
14 ounces grape tomatoes
4 clove garlic, peeled
5 to 6 leaves fresh basil
Freshly grated Parmesan cheese for serving
Set Sun Oven out to preheat.
In a medium pot, toss together the oil, tomatoes, garlic, and basil. Season with salt. Cover and cook in the Sun Oven until the tomatoes are very soft, at least 2 hours. For more intense flavor leave the pot in the Sun Oven all day. Remove the pot from the Sun Oven. Let cool slightly. Pour everything into a food processor and pulse a few times. Serve over cooked pasta. Sprinkle with cheese.
