I’m still coming to grips with the fact that I have to do all my own cooking and cleaning now that my vacation is over. The cleaning part is easy – I just pretend I don’t see the mess – but I can’t ignore my growling stomach. Luckily, before we left I had the foresight to put together some homemade frozen meals from dinner leftovers. I zap them in the mircowave when lunch time catches me off guard and I need something to eat right away. Today I used my Sun Oven to heat up leftover pulled pork, risotto and broccoli. The oven safe dish is recycled from a purchased frozen meal and can be used in the Sun Oven. It does need to be covered. I used an oval roasting pan. If you don’t have one, tin foil covered with a tea towel should work just fine. It takes a lot longer to heat frozen foods in the Sun Oven, about 45 minutes, but it’s worth the wait.
