Most muffin recipes yield twelve muffins. Most six cup muffin pans won’t fit side by side on the GSO’s leveling tray. So what’s a solar cook to do? Stack ’em. I coat six canning rings with cooking spray before placing them over the cups of one pan, then I stack the second pan on top. The top pan may cook a little faster than the bottom. If so, simply remove it a few minutes sooner. You could, of course, bake your muffins (or cupcakes) in two batches, but by putting them in the GSO together you’ll free it up faster for more solar cooking.
