Apricots and almonds complement each other perfectly in this easy to make sweet bread.

Sun Oven Apricot Almond Honey Loaf


For the loaf:

1/2 cup butter, softened

2/3 cup sugar

1/3 cup honey

1/3 cup sour cream

2 eggs

1 teaspoon vanilla

1 1/2 cups flour

2 teaspoons baking powder

1/2 teaspoon salt

3/4 cups dried apricots, finely chopped

1/2 cup chopped toasted almonds

1 tablespoon grated lemon peel

For the glaze:

1 tablespoon sour cream

1/4 teaspoon vanilla

1/2 powdered sugar, sifted


Set Sun Oven out to preheat. Butter and flour a standard loaf pan; set aside.

In a large bowl, beat together the butter, sugar, honey, sour cream, eggs, and vanilla until blended. In a small bowl whisk together the flour, baking powder, and salt. Stir the flour mixture into the butter mixture until just moistened. Fold in the apricots, almonds, and lemon peel. Pour batter into prepared pan. Bake in the Sun Oven until a toothpick inserted in the center comes out clean, about 1 1/4 hours. Set the pan on a rack to cool for 15 minutes. Remove the loaf from the pan and cool completely on the rack. In a small bowl, stir together all the ingredients for the glaze. When the loaf is cool, brush the top with the glaze mixture.
