There’s really no excuse not to eat veggies when you cook in a Global Sun Oven. Even if you’ve got a pot going with your main course in it you can probably find a way to fit in some sides. Potatoes or corn on the cob (unhusked) can be placed along side the pot on the leveling tray or on the lid. If you want to cook smaller vegetables and don’t have room for another pot you can make a baking pouch out of parchment paper and wedge it in wherever.

These were all baked in parchment, zucchini, endive, carrots, and fennel.
