Serve this as is as a side dish or toss it with some whole wheat pasta.

Sun Roasted Garlic Cauliflower


2 tablespoons olive oil

5 cloves garlic, minced

1/4 to 1/2 teaspoon red pepper flakes

salt to taste

1 head cauliflower, florets only

1/3 cup freshly grated  Romano cheese

1 tablespoon chopped flat-leaf parsley


Set Sun Oven out to preheat.

In a large bowl, combine the oil, garlic, red pepper, and salt. Add the cauliflower and toss to coat. Spread the cauliflower out in a baking pan. Cover with a second pan and transfer to the Sun Oven. Cook until soft and slightly browned, 1 1/2 to 2 hours. Toss with cheese and parsley.

Makes 6 servings.
