This is a great side dish for curries or the savory pumpkin patties I made a few days ago.
Indian Spice Sun Roasted Cauliflower
Ingredients
1 tablespoon olive oil
1 teaspoon garam masala
1/2 teaspoon ground cumin
1/8 teaspoon red pepper flakes
salt to taste
2 cups cauliflower florets
Preparation
Set Sun Oven out to preheat.
In a large bowl, combine the oil, garam masala, cumin, red pepper, and salt. Add the cauliflower and toss to coat. Spread the florets out in a baking pan. Cover with a second baking pan and transfer to the Sun Oven. Bake until the cauliflower is tender, about 1 hour.
Makes 4 servings.
