Sun Oven meatloaf needs to be covered while it cooks. Covering the pan with aluminum foil and a dark tea towel works just fine. An oval, light-weight, lidded roasting pan works even better. It’s cheaper in the long run, and, if any juices bubble over, the pan will catch them and the Sun Oven will stay clean.

Solar Italian-Style Meat Loaf


1 pound ground beef

1 cup breadcrumbs

1 onion, minced

1 clove garlic, minced

1 egg, beaten

1/4 cup freshly grated Parmesan cheese

1/2 teaspoon dry mustard

1/3 cup red wine

1/4 teaspoon dried basil

1/4 teaspoon pepper

1/4 teaspoon salt


Set Global Sun Oven out to preheat

Comine all the ingredients in a large bowl. Mix thoroughly with your hands. Pat the meat mixture into a 8×4-inch loaf pan. Place the loaf pan in a 14-inch oval roasting pan. Or form an oval shaped loaf and use a smaller roasting pan. Bake meat loaf in Sun Oven until fully cooked, about 1 1/2 hours.

Makes 4 to 6 servings
