Red lentil soup is a favorite at our house. This super easy recipe doesn’t take long to cook in the Sun Oven so it makes a good solar cooked lunch or dinner, even on days when you get a late start.
Solar Red Lentil Soup
Ingredients
2 tablespoons olive oil
1 medium onion, chopped
1 1/2 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon mustard powder
Zest from one medium lemon, roughly chopped*
1 1/2 cups dry red lentils, picked over and rinsed
Salt to taste
Preparation
Set Global Sun Oven out to preheat
Heat oil in a pot and saute onion until it begins to soften, about 5 minutes. Add the spices, lemon zest, lentils, and 4 1/2 cups water. Stir well, cover, and transfer to the Sun Oven. Cook until the lentils are soft, about 1 1/2 hours. Add salt to taste.
Makes 4 servings.
*Cut the zest off in strips (see picture below) and roughly chop. It will dissolve as the soup cooks.
