I baked this savory pie for our packed lunch recently when we were out and about from early morning until late evening. On days like that I don’t get any kind of cooking done. It was very filling and easy to eat on the go. I can see why British miners took savory pies with them to work in the mines; they’re even easier to eat than a sandwich.
Solar Cheese and Onion Pie
Purchased or homemade pie dough for a 9-inch pie, top and bottom.
1 tablespoon butter
1 large onion, finely chopped
1/4 pound potatoes, peeled, diced, and steamed
2 1/2 cups strong Cheddar cheese, coarsely grated
2 large eggs
4 tablespoons evaporated milk
2 tablespoons flat-leaf parsley, chopped
1/8 teaspoon cayenne pepper
salt and pepper to taste
1 beaten egg for glaze.
Set Global Sun Oven out to preheat.
Melt butter in a large skillet and sauté the onion until softened and translucent, let cool. In a large bowl combine the cooked onion, steamed potatoes, cheese, eggs, milk, parsley, cayenne, salt, and pepper. Line a 9-inch metal pie tin with dough, fill with cheese and onion mixture and top with remaining dough. Crimp edges. Brush top with beaten egg and bake in Sun Oven until golden brown, 1 t0 1 1/2 hours.
