AA Oval Roasting Pan

These baked apples are easy to prepare with ingredients you probably already have and are delicious on a cold winter’s night.

Sun Oven Baked Apples

4 Granny Smith apples (or other tart baking apple)

1/3 cup raisins

1/4 cup light brown sugar, packed

1/2 teaspoon apple pie spice or cinnamon

1/4 cup apple juice

1 tablespoon butter, cut into 4 pieces

Whipped cream for serving (optional)

Set Sun Oven out to preheat.

Peel off a strip of the skin from the top of each apple. Place the apples, top side up, in a pot or roasting pan. In a small bowl, combine the raisins, brown sugar, and apple pie spice. Spoon the mixture into the centers of the apples, pressing it in with a small butter knife. Pour the apple juice around the apples. Top each apple with a piece of the butter. Cover and transfer to the Sun Oven and bake until the apples are soft, 1 to 1 1/2 hours. Using a large spoon, transfer the apples to dessert bowls. Spoon the cooking liquid over the apples. Top with whipped cream if using.

Makes 4 servings.
