Bananas and chocolate chips combined with sunshine make for a super moist, slightly decadent, very delicious loaf.
Sun Oven Banana Bread with Chocolate Chips
Ingredients
1/4 cup sour cream
1 teaspoon baking soda
1/2 cup butter, softened
1 1/4 cups sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/4 teaspoon salt
2 small, ripe bananas, coarsely mashed (about 1 cup)
1 cup semi-sweet chocolate chips
Preparation
Set Sun Oven out to preheat. Coat a standard loaf pan with cooking spray.
In a small bowl, stir together the sour cream and the baking soda and set aside.
Using an electric mixer, cream the butter with the sugar in a large bowl until light and fluffy.
Add the eggs, one at a time, beating well after each addition.
Beat in the sour cream mixture and the vanilla extract. Using a wooden spoon, stir in the flour, salt, bananas, and chocolate chips.
Pour the batter into the prepared loaf pan and bake in the Sun Oven until a toothpick inserted into the center comes out clean, about 1 hour.
Cool on a rack in the pan for 15 minutes. Remove bread from the pan and cool completely on the rack.
