The breakfast cereal aisle of the grocery store is one of my favorites. I’m on the constant look out for new varieties that are high in fiber, low in sugar, and taste good. I rarely buy any type that has more than three grams of sugar per serving, so I was delighted to recently discover Uncle Sam Original at my local market. I don’t know how I’ve overlooked these tasty toasted wheat flakes that meet all my criteria and contain only one gram of sugar. I even like the box. In addition to the usual reading material on the back and sides the inside is also full of useful information. I recently finished my first one and cut it open to see what it said. In it I found their web address, well that was on the outside too, but now I had to check it out for some recipes and a coupon. Here’s one of the recipes I found there.

Sun Oven Uncle Sam Cookies

(Adapted for the Sun Oven from the Uncle Sam website)


1 cup all-purpose flour

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/4 cup canola oil

1/2 cup sugar

1 egg

1/2 teaspoon vanilla

1 tablespoon fresh orange juice

1/2 teaspoon grated orange zest

1 cup Uncle Sam Original Cereal

3/4 cup raisins


Set Sun Oven out to preheat. Prepare baking racks with parchment paper or silicone mats.

Sift together the flour, baking soda, salt, and cinnamon into a medium bowl. Set aside. In a large bowl, use an electric mixer to cream the oil and sugar. Add the egg and beat for two minutes. Beat in the vanilla, orange juice, and zest. Beat in the flour mixture. Fold in the Uncle Sam cereal and raisins. Drop the cookie dough by teaspoonfuls onto the prepared baking racks. Bake until lightly browned, about 15 minutes. Transfer cookies to racks to cook completely.

Makes about 2 1/2 dozen.
