Before using the Sun Oven I never cooked beets. Now they’re one of my favorite vegetables.
Sun Oven Braised Beets
6 medium beets, peeled and quartered
2 tablespoons sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon red wine vinegar
2 tablespoons water
1/4 cup sour cream
1 tablespoon prepared horseradish
1 tablespoon fresh flat-leaf parsley, chopped
Set Sun Oven out to preheat.
In a large pot, combine the beets, sugar, salt, pepper, vinegar, and water. Cover and transfer to the Sun Oven. Cook until the beets are tender, 1 1/2 to 2 hours.
Combine the sour cream and horseradish in a small bowl. Toss with the beets. Transfer to a serving dish and garnish with the parsley.
6 to 8 servings.
