Bacon infuses the cabbage with flavor for a side dish everyone will love.
Sun Oven Braised Cabbage and Onions with Bacon
3 strips bacon
1 head green cabbage, cut into 8 wedges
1/2 onion, sliced
1/2 cup chicken broth
Salt and pepper to taste.
Set Sun Oven out to preheat.
Place the bacon in the pot or baking dish large enough to hold the cabbage wedges.
Cook the bacon, uncovered, in the Sun Oven until crisp, about 30 minutes.
Transfer the bacon to paper towels to cool.
Arrange the cabbage wedges in the pan with the bacon fat, it’s o.k. if they overlap slightly. Scatter the onion between the cabbage. Pour the broth in the pan. Roughly chop the bacon and sprinkle it over the vegetables.
Cover and cook until the cabbage is tender, about 1 hour. Season to taste with salt and pepper.
Makes 6 to 8 servings.
