Solar braised cabbage is an inexpensive side dish the goes with just about everything.
Sun Oven Braised Green Cabbage
1 head green cabbage, cut into 8 wedges, most of core removed
1 sweet onion, sliced
1 cut into 1/4-inch rounds
1/4 cup olive oil
1/4 cup broth, chicken or vegetable
salt and pepper to taste
Set Sun Oven out to preheat. Spray a baking pan with cooking spray.
Arrange the cabbage wedges in a single layer in the prepared pan (a little over lapping is ok). Scatter the onions and carrot over the cabbage. Drizzle with the oil and broth. Season with salt and pepper. Cover the pan with a second baking dish or aluminum foil covered with a dark kitchen towel. Transfer to the Sun Oven and bake until tender, 2 to 2 1/2 hours. Serve warm or at room temperature.
Makes 4 to 6 servings.
