This rice goes great with grilled seafood, curries, roasted vegetables, and more.
Sun Oven Coconut Rice
Ingredients
2 cups uncooked white rice
1 1/2 cups water
1 cup unsweetened coconut milk
1/2 teaspoon salt
Preparation
Set Sun Oven out to preheat.
Combine all the ingredients in a large pot. Cover and transfer to the Sun Oven. Cook until all the liquid has been absorbed, about 45 minutes. Fluff with a fork and serve.
Makes 6 servings.
