Muffins cross stacked

Any mixture of dried fruit will work for these tasty muffins. You could even toss in a few chopped nuts.

Sun Oven Spiced Dried Fruit Muffins


2 cups all-purpose flour

1 tablespoon baking powder

1 tablespoon apple pie spice

1/8 teaspoon salt

1/2 cup sugar

1 cup mixed dried fruit, large pieces chopped into raisin sized bits

2 large eggs, at room temperature

1 cup milk, at room temperature

6 tablespoons butter, melted and cooled


Set Sun Oven out to preheat. Spray the indentations of 2 6-cup muffin pans with cooking spray or line with paper liners. Alternately, arrange 12 silicone baking molds in two baking pans.

In a large bowl, sift together the flour, baking powder, apple pie spice, and salt. Stir in the sugar and mixed dry fruit. In a medium bowl, lightly beat the eggs. Beat in the milk and melted butter. Make a well in the center of the dry ingredients and pour in the egg mixture. Gently stir until just combined. Spoon the batter into the prepared pans. Cross stack the pans in the Sun Oven and bake until a toothpick inserted in the center of one muffin comes out clean, about 30  to 40 minutes. The top muffins will cook faster. Cool the muffins in the pan for 5 minutes then transfer to a wire rack and cool completely.
