This easy to make cake comes out great in the Sun Oven. It’s good for an afternoon snack or breakfast.

Sun Oven Spiced Honey Cake


1 1/2 cups all purpose flour

1/2 cup whole wheat flour

1 1/2 teaspoons ground cinnamon

1 teaspoon ground ginger

1/4 teaspoon ground cloves

1 teaspoon baking soda

3/4 teaspoon salt

2/3 cup honey

1/2 cup sugar

1/2 cup vegetable oil

2 large eggs

1/2 cup boiling water

1 cup raisins


Set Sun Oven out to preheat. Butter and flour a 9x5x3-inch loaf pan, set aside.

Whisk together first 7 ingredients, flour through salt, in a medium bowl. In a large bowl beat the honey, sugar, oil, and eggs with an electric mixer until blended. Beat in the dry ingredients in 2 additions. Beat in the boiling water. Stir in the raisins. Pour batter into the prepared pan. Bake until brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Cool cake in pan 10 minutes. Turn out onto a rack and cool completely.
