This is my favorite meat loaf recipe. It’s from the 1995 edition of the “Toaster Oven Cookbook” and is the only surviving page of my copy. It goes great with pasta and tomato sauce. Any leftovers can be used in sandwiches.

Solar Italian-Style Meat Loaf


1 pound ground beef

1 cup breadcrumbs

1 onion, minced

1 clove garlic, minced

1 egg, beaten

1/4 cup freshly grated Parmesan cheese

1/2 teaspoon dry mustard

1/3 cup red wine

1/4 teaspoon dried basil

1/4 teaspoon pepper

1/4 teaspoon salt


Set Global Sun Oven out to preheat

Comine all the ingredients in a large bowl. Mix thoroughly with your hands. Pat the meat mixture into a 8×4-inch loaf pan. Place the loaf pan in a 14-inch oval roasting pan. Or form an oval shaped loaf and use a smaller roasting pan. Bake meat loaf in Sun Oven until fully cooked, about 1 1/2 hours.

Makes 4 to 6 servings
