Bulgur and lentils combined with a little sunshine make a hearty, satisfying, meatless meal.
Sun Oven lentil and Bulgur Pilaf
Ingredients
4 cups water
4 carrots, sliced
2 cups frozen corn
1 cup bulgur
1/2 cup dried brown lentils, rinsed and drained
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon ground coriander
1/4 teaspoon freshly ground pepper
4 cloves garlic, minced
4 tomatoes, chopped (about 2 cups)
3 ounces feta cheese, crumbled (optional)
Preparation
Set Sun Oven out to preheat.
In a large pot, combine the water, carrots, corn, bulgur, lentils, oregano, cumin, coriander, pepper, and garlic. Cover and transfer to the Sun Oven. Cook until all the ingredients are soft, 2 to 3 hours. Remove from the Sun Oven and stir in the tomatoes. Cover and let stand for 10 minutes. Season to taste with salt. Sprinkle feta cheese on each serving.
Makes 6 servings.
