Slow roasted root vegetables are among my favorite things to cook in the Global Sun Oven. Carrots come out particularly well; solar roasting them unlocks their rich nutty flavor.
Solar Roasted Carrots
Ingredients
Carrots, peeled
Butter, softened
Kosher salt
Freshly grated parmesan cheese
Preparation
Place Global Sun Oven® out to preheat
Rub carrots with butter; place in on a rimmed baking sheet with about 1/8 a cup water. Sprinkle with salt. Roast in GSO®, uncovered, until carrots are soft and water has been absorbed.
Cut into rounds. Toss with parmesan cheese.
