Salmon Burgers

Purchased salmon burgers, fresh or frozen, are usually disappointing in the flavor department. Luckily these tasty patties are easy to make and sure to please. Cook as many as you need and freeze the rest (uncooked) for future use.

Sun Baked Salmon Burgers

(adapted for the Sun Oven from


1 can (14.75-ounce) salmon, skin removed, flaked*

2 large eggs, lightly beaten

1/4 cup chopped flat-leaf parsley

2 tablespoons finely chopped onion

1/4 cup seasoned dry bread crumbs

2 tablespoons freshly squeezed lemon juice

1/4 teaspoon red pepper flakes


Set Sun Oven out to preheat. Line a baking rack or rimmed sheet with a silicone mat or parchment paper; spray with cooking spray.

In a medium bowl, use your hands to mix together all the ingredients. Make 6 firmly packed patties. Place patties on prepared baking rack. Bake in the Sun Oven until golden, 45 minutes to 1 hour. Serve on buns with your sauce of choice or with a salad.

Makes 6 servings.

*Don’t bother removing the bones. They’ll crumble when you mix everything. They add lots of calcium and no one will know they’re there.
