This recipe is a combination of two from two of my favorite cookbook writers: Marcella Hazan and Mark Bittman.
Sun Oven Green Beans with Butter and Tomato
Ingredients
3 tablespoons butter, cut into chunks
1 onion, finely chopped
1 can (14-ounce) chopped or crushed tomatoes
1 pound green beans, tips trimmed
1/2 cup water
salt and pepper to taste
Preparation
Set Sun Oven out to preheat.
Combine all the ingredients in a large sauce pan or oven to table dish. Cover and transfer to the Sun Oven. Cook until the beans are very tender, about 2 hours.
Makes 4 to 6 servings.
