Last week’s fickle weather made solar cooking a little tricky. The mornings were mostly cloudy. Around noon the sun would make a feeble appearance, just enough to get my hopes up, then it would be intermittent sun and clouds for the remainder of the day. So when I got a full day of sunshine on Sunday I made the most of it. In addition to the biscotti that I blogged about already I made a couple of big batches of some of our favorite things – and squirreled most of it away in the freezer. It’s a good thing I did, because this week’s forecast isn’t looking any better. Now with a well stocked freezer we can enjoy (reheated) solar cooked meals even when it’s cloudy.

Pretty much any soup or stew is a candidate for freezing. I freeze mine in small, or even individual, servings and only heat up as much as needed at a time.
