With a Sun Oven and a grill you’ll be able to cook most of your food outside. Your house will stay cool and your energy bill will stay low. Homemade veggie burgers are much better than store bought. The patties can also be frozen and go straight from the freezer to the grill.
Black Bean Burgers
2 cups solar cooked black beans, drained
1/2 bell pepper (green, yellow, or red), roughly chopped
1/2 onion, cut into wedges
2 cloves garlic, peeled
1 tablespoon chili powder
1 tablespoon ground cumin
1 teaspoon hot sauce
1/2 cup breadcrumbs
In a large bowl, mash the black beans with a fork. Put the bell pepper, onion, and garlic in a food processor and process on pulse until finely chopped.
Transfer the onion mixture to a fine mesh strainer and press out excess moisture, then combine with the mashed beans. In a small bowl beat together the egg, chili powder, cumin, and hot sauce, then stir into the bean mixture. Stir in the breadcrumbs. Divide the mixture into four patties. Coat a sheet of tin foil with cooking spray, place the patties on the foil and cook on a hot grill.
