Nothing beats coming home to a solar cooked meal, especially one that can go straight from the Sun Oven to the table without any last minute prep work to do. Chicken cooked over a bed of rice and vegetables is just that.

It’s so easy to prepare you don’t even need a recipe. Just spread some rice out in a large roasting pan, chop up whatever vegetables you have on hand and mix them in, add water (about 1/3 less than you’d normally use, the juices from the chicken will provide the rest), top everything with cut up chicken pieces (fresh or frozen), season with herbs of your choice, cover and place in the Sun Oven until dinner time.

If you’re feeling really ambitious you can make a salad to go with it.
