Solar Pumpkin Soup


1 tablespoon olive oil

1 onion, finely chopped

2 teaspoons ground cumin

1/2 teaspoon ground cinnamon

1/8 teaspoon cayenne

5 cups vegetable broth

2 cans (15-ounce) pumpkin puree

1/2 cup unsweetened applesauce

salt and pepper to taste Grated

zest of 1 lime

2 tablespoons lime juice


Set Sun Oven out to preheat.

Heat the oil in a large pot over medium heat. Add the onion, stirring frequently, until softened, about 3 minutes. Stir in the cumin, cinnamon, and cayenne. Remove from heat and stir in the broth, pumpkin, and applesauce. Cover and transfer to the Sun Oven. Cook until heated through and flavors have blended, about 1 hour. Season with salt and pepper. Stir in lime zest and juice just before serving.

Makes 8 servings.
