100% whole-wheat bread can be tricky but with a mixture of whole-wheat and white bread flour I consistently get a perfect loaf.

Light Sun Oven Whole-Wheat Bread


1 7/8 cups water

2 tablespoons olive oil

4 1/4 cups whole-wheat bread flour

1 3/4 cups white bread flour

2 teaspoons salt

1 tablespoon granulated sugar

2 teaspoons rapid-rise (instant) active dry yeast


Pour the water and the oil into the bread machine pan. Sprinkle the flour over the liquid making sure it is completely covered. Add the salt and sugar in separate corners of the pan. Make a shallow indentation in the center of the flour and add the yeast. Set the bread machine to the dough setting and press start. Check the dough after the first few minutes of kneading; add a little water if it’s too dry. When the dough cycle has finished turn the dough out onto a lightly floured surface and gently punch down. Cut the dough in half and form two loaves. Put the dough into two lightly oiled loaf pans, cover with oiled plastic wrap and let rise in a warm spot 30 to 45 minutes. Set Global Sun Oven out to preheat while the loaves rise. Bake bread in Sun Oven until it sounds hollow when tapped, 1 t0 1 1/2 hours.

Makes 2 loaves.
