Cranberry Bake

Cranberries are so good for you that it’s a shame many of us only consume them once or twice a year. This simple dish is great on its own. It also goes well with roast meats. Any leftovers can be stirred into oatmeal or yogurt.

Sun Oven Cranberry Bake


1 bag (12-ounces) fresh cranberries, picked over and rinsed

1 large firm apple, peeled, cored, and cut into chunks

1/2 cup pure maple syrup

The zest of one orange

3 tablespoons freshly squeezed orange juice

1 or 2 cinnamon sticks


Set Sun Oven out to preheat. Coat a baking dish with cooking spray, set aside.

In a large bowl, combine the cranberries, apple chunks, maple syrup, orange zest, and juice. Mix well. Pour the mixture into the prepared baking dish. Add the cinnamon sticks. Cover and bake in the Sun Oven until the fruit is soft and the sauce is syrupy, 1 to 1 1/2 hours. Remove and discard the cinnamon sticks. Serve warm or cold. Refrigerate any leftovers in an airtight container.
